We rarely deep-fry anything at home, we prefer baking! That’s the same for fresh potatoes: knowing the right procedures and choosing the best seasoning, there’s nothing as crispy and delicious as oven-cooked potatoes! Plus…it’s really really easy!
Ingredients (for 4 servings):
800 gr fresh potatoes
extra virgin live oil
rosemary
garlic
salt
Boil water in a pot with a pinch of rock salt. Cut potatoes into small cubes. Boil them in boiling water for 5 minutes. Drain them and put them in a bowl; add olive oil, salt, a clove of garlic and rosemary. Mix with a spoon so that all potatoes are well-seasoned. Put potatoes in a baking tray with grease-proof paper. Bake (180°degrees C) until they become golden (I leave them longer so they become very crispy!).

I have a love hate relationship with potatoes. I love them, they hate me. Makes me pack on the pounds with their tasty goodness. I totally agree that there is nothing as delicious as an oven-cooked potato!
