Peanut butter tiramisù!

Tiramisù is my favourite dessert! I always order it when I find it on a restaurant menu, I love tasting and finding out the different methods people use to make it, I think it is one of the most versatile Italian desserts and I love experimenting new recipes with new ingredients! So when we moved to Canada, I was already in love with peanut butter and I thought “I should try to make a peanut butter tiramisù”…now everybody asks me to make one when I have them for dinner!

Since many people asked me for the recipe, I wrote it down and I want to share it with you, hoping you will like it…I find it delicious!

Ingredients

6 eggs

250 gr. Mascarpone cheese

250 gr. whipped cream

120 gr. sugar

2 tbsp peanut butter

peanuts

espresso coffee (as required)

1 package (400 gr) of Savoiardi (ladyfingers)

Method

Separate the yolks from the whites and put the latter in the fridge. Add 60 gr. of sugar to the yolks and whisk them. Once the mixture becomes light and foamy, add Mascarpone cheese and peanut butter (you can add only 1 tbsp or more than 2, depending on your taste).

Whip the cream (which must be cold, so keep it in the fridge until the moment you will use it) and add it to the mixture; whip the egg whites with 60 gr. of sugar and add it to the mixture, stirring from the bottom to the top of the bowl.

Soak Savoiardi in espresso coffee (that you previously sugared), paying attention they don’t get to drenched, and make a first layer with them in a casserole; then add a layer of the mixture, then a second layer of Savoiardi and so on, alternating layers of cream and layers of Savoiardi.

Make sure you top the casserole with a layer of cream; add chopped peanuts on top. Voilà our peanut butter tiramisù!

  1. I LOVE tiramisu and I’ve always saved recipes to try. This is definitely at the top of my list–even though I’m not a fan of peanut butter, this sounds fantastic!
