Spaghetti with eggplant, cherry tomatoes and raisins!

Delicious and simple pasta recipe that will make your taste buds veeeeeery happy!

Ingredients (for 4 servings)

1 eggplant

15-16 cherry tomatoes


1 onion

1 glove of garlic

Extra virgin olive oil


sesame seeds (optional)


Put water in a pot and let it boil. Put raisins in a glass of hot water to re-hydrate them. Cut eggplant in small cubes and sauté in a pan with olive oil, salt and the clove of garlic until they’re golden. In the meantime, put olive oil in a bigger pan and add thinly-chopped onion; once it is golden, add cherry tomatoes and salt. Let them sauté until then open up and make a light sauce. Once the pasta is ready, drain it and add it to your cherry tomato sauce; add raisins, eggplant cubes and serve (if you like them, you can add sesame seeds…it gets even better 😉 )
