Delicious, super-easy zucchini sauce!

Fresh zucchini right from the garden for lunch…what can we make with them? …zucchini sauce!

This very-easy sauce is terrifically perfect on pasta to delight your summer lunches!


2 zucchini

1 clove of garlic

1/2 chopped onion

EV olive oil


black pepper

2 leaves of fresh basil


Sauté garlic and onion in a frying pan with olive oil. Once they’re golden coloured, add chopped zucchini and salt. Cook for about 10 minutes. Maple&Saffron Abruzzo tours zucchini

Put everything in a blender and add a pinch of black pepper and the basil leaves. Blend and add a couple of spoons of water if you find the cream is too thick.
